Dans une petite ville comme Gembloux, peut-\u00eatre, mais dans une ville comme Namur, on trouve de plus en plus de restaurants qui ont les m\u00eames valeurs que nous. Avec une cuisine peut-\u00eatre plus gastronomique. C\u2019est vrai qu\u2019on reste un peu un ovni dans le sens o\u00f9 on utilise de tr\u00e8s tr\u00e8s bons produits, mais on essaye de garder des prix relativement accessibles. Je dis \u00ab&nbsp;relativement&nbsp;\u00bb parce que, malheureusement, on a quand m\u00eame d\u00fb pas mal augmenter nos prix au fil des ann\u00e9es. Mais on ne se voit pas demander plus de 25&nbsp;euros pour un plat. Pour vous, c\u2019\u00e9tait une \u00e9vidence d\u00e8s le d\u00e9part&nbsp;?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Oui, cela fait partie des valeurs transmises par mes parents, des \u00e9colos qui font hyper attention \u00e0 leur mani\u00e8re de consommer. Je suis pass\u00e9e \u00e0 une conception plus classique de l\u2019Horeca pendant mes \u00e9tudes \u00e0 l\u2019IFAPME. J\u2019ai fait mon stage en alternance dans un restaurant qui achetait tout chez Metro [<em>le principal grossiste du secteur Horeca, qui fait la part belle aux fili\u00e8res productivistes et aux produits ultra-transform\u00e9s, NDLR<\/em>]. J\u2019ai d\u00e9couvert un monde o\u00f9 on appelle \u00e0 23h30, \u00e0 la fin du service, et le lendemain 6h, tout est livr\u00e9. Mais en d\u00e9veloppant mon propre projet, mes valeurs sont revenues. Cela me paraissait logique de les respecter.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pendant votre formation, les professeurs et \u00e9tudiants n\u2019y \u00e9taient pas sensibles&nbsp;?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Non. \u00c0 l\u2019IFAPME, j\u2019ai m\u00eame envie de dire qu\u2019on nous encourageait \u00e0 nous tourner vers des produits industriels. Je me souviens qu\u2019un camarade avait demand\u00e9 \u00e0 un professeur si on pouvait apprendre \u00e0 faire de la p\u00e2te feuillet\u00e9e. Il avait r\u00e9pondu&nbsp;: \u00ab&nbsp;Pourquoi&nbsp;? C\u2019est une gal\u00e8re \u00e0 faire et elles te reviendront moins cher dans le commerce&nbsp;\u00bb. Sont-elles partag\u00e9es par votre client\u00e8le&nbsp;?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pas vraiment. La plupart n\u2019en ont rien \u00e0 faire. Ce qui les touche plus, c\u2019est le c\u00f4t\u00e9 local. Mais du local intensif et pas bio leur irait tr\u00e8s bien aussi. Les gens ont du mal \u00e0 comprendre que local ne signifie pas forc\u00e9ment \u00e9thique. Quand on explique qu\u2019on ne vend pas de Leffe, par exemple, on nous r\u00e9pond&nbsp;: \u00ab&nbsp;Pourtant, c\u2019est belge&nbsp;!&nbsp;\u00bb Il y a m\u00eame quelqu\u2019un qui a \u00e9crit sur Google que d\u2019habitude il n\u2019aime pas le bio, mais que chez nous c\u2019est bon. Cela dit, je suis s\u00fbre que plein de client\u00b7es appr\u00e9cient notre engagement sans forc\u00e9ment nous le dire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>En tout cas, vous le mettez en avant dans votre communication. Sur vos cartes, vous avertissez&nbsp;: \u00ab&nbsp;Ici vous ne trouverez pas de produits de grandes enseignes ou de multinationales. Nous utilisons quasi exclusivement des produits locaux (belges), de saison, issus en priorit\u00e9 de petits producteurs, et souvent biologiques. Valoriser le travail de nos petits producteurs et artisans est \u00e0 la base de nos choix et r\u00e9flexions.&nbsp;\u00bb<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On essaye de jouer un r\u00f4le \u00e9ducatif. Surtout mon compagnon Thomas, qui fait le service en salle. Comme on n\u2019est pas labellis\u00e9 bio (c\u2019est un co\u00fbt), on ne peut pas pr\u00e9ciser sur nos cartes ce qui est bio, c\u2019est-\u00e0-dire en r\u00e9alit\u00e9 quasiment tout. On n\u2019aurait pas non plus la place de d\u00e9tailler chaque source d\u2019approvisionnement.
