Dans cette petite infrastructure paysanne, le geste est, au contraire, assum\u00e9 au grand jour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>\u00c9dito | Yves Raisiere, journaliste. <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Quelles images publier pour rendre compte de la vie dans un abattoir\u2009? Nous avons h\u00e9sit\u00e9 jusqu&#8217;\u00e0 la veille du bouclage du nouveau num\u00e9ro de Tchak (printemps 26), <strong>en vente en librairie \u00e0 partir du lundi 16 mars<\/strong>. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Finalement, nous en avons choisi trois, allant de l\u2019\u00e9vocation symbolique \u00e0 la r\u00e9alit\u00e9 plus crue. Pourquoi ce choix ? Parce qu&#8217;il invite \u00e0 regarder sans d\u00e9tour ce que l\u2019industrie agroalimentaire s\u2019efforce de tenir hors champ\u00a0: <strong>manger de la viande implique qu\u2019un animal soit mis \u00e0 mort<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Au c\u0153ur de ce 25\u00b0 num\u00e9ro, vous pourrez donc lire le r\u00e9cit de deux journ\u00e9es pass\u00e9es avec Claudy, <strong>un homme dont le m\u00e9tier &#8211; ouvrier d&#8217;abattoir  &#8211; ne fait jamais la couverture du moindre magazine professionnel<\/strong>, tant il suscite une r\u00e9action visc\u00e9rale. <\/p>\n\n\n\n<div class=\"wp-block-stackable-heading stk-block-heading stk-block-heading--v2 stk-block stk-c7e5e6f\" id=\"avant-les-tueries-jouxtaient-les-boucheries\" data-block-id=\"c7e5e6f\"><h3 class=\"stk-block-heading__text\">Avant, les tueries jouxtaient les boucheries<\/h3><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Pendant longtemps, cette r\u00e9alit\u00e9 a fait partie du quotidien. <strong>De nombreux foyers du monde rural abattaient, d\u00e9pe\u00e7aient et \u00e9vidaient<\/strong> leurs propres animaux pour leur consommation personnelle. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dans les villes, <strong>les \u00ab\u2009tueries\u2009\u00bb jouxtaient boucheries et march\u00e9s<\/strong>, et le geste se d\u00e9roulait sous les yeux de toutes et tous. Ce n\u2019est qu\u2019\u00e0 partir du XIXe&nbsp;si\u00e8cle, pour des raisons d\u2019hygi\u00e8ne, d\u2019urbanisation et d\u2019\u00e9volution des sensibilit\u00e9s, que les abattoirs ont \u00e9t\u00e9 repouss\u00e9s vers les p\u00e9riph\u00e9ries, soustrayant cet instant au regard collectif.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cette mise \u00e0 distance a cr\u00e9\u00e9 un paradoxe. Aujourd\u2019hui, notre soci\u00e9t\u00e9 consomme massivement de la viande, mais elle occulte les r\u00e9alit\u00e9s concr\u00e8tes de sa production. L\u2019absence d\u2019images endort les consciences, tandis que <strong>le marketing att\u00e9nue la dissonance cognitive <\/strong>en pr\u00e9sentant la viande comme un simple produit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Claudy, lui, vit au c\u0153ur de ce r\u00e9el. La mise \u00e0 mort s\u2019inscrit dans un cycle qu\u2019il accepte sans l\u2019\u00e9dulcorer. <strong>Il conna\u00eet les fermes d\u2019origine et veille \u00e0 ce que les animaux soient trait\u00e9s avec soin jusqu\u2019au dernier moment<\/strong>.
