Cuire un aliment permet en effet de d\u00e9truire, au moins en partie, les virus, bact\u00e9ries et moisissures susceptibles de l\u2019alt\u00e9rer.<\/p>\n\n\n\n<p>\u00ab&nbsp;<em>Une autre technique est le s\u00e9chage<\/em>, poursuit \u00c9ric Birlouez.&nbsp;<em>On d\u00e9coupe de fines lani\u00e8res de viande, on les accroche \u00e0 un b\u00e2ton pour les faire s\u00e9cher au soleil, \u00e0 l\u2019air libre. \u00c7a prend un peu de temps, mais \u00e7a fonctionne bien. Ainsi, on d\u00e9shydrate l\u2019aliment et on prive les bact\u00e9ries d\u2019eau, qui en ont besoin pour survivre.<\/em>&nbsp;\u00bb<\/p>\n\n\n\n<p>M\u00eame principe pour le salage qui, en plus de provoquer une certaine dessiccation, a des propri\u00e9t\u00e9s antiseptiques. Idem pour le fumage, o\u00f9 la d\u00e9shydratation par la source de chaleur se combine aux effets de la fum\u00e9e pour limiter ou supprimer les germes pathog\u00e8nes. Le sp\u00e9cialiste cite encore la fermentation, proc\u00e9d\u00e9 utilis\u00e9 pour faire de la choucroute, du lait ferment\u00e9 (l\u2019anc\u00eatre de nos yaourts) ou du fromage.
