Pintafish ?</h3>\n

<p>Notre activité autour du poisson a commencé en 2008 au sein d’une\n
autre entreprise fondée par mon père, Veeakker [<em>Pintafish et\n
Veeakker étant depuis lors deux marques d’une entreprise à\n
responsabilité limitée nommée Basic Input Output System, NDLR</em>].\n
Veeakker est une boucherie et une entreprise de distribution de produits\n
paysans en circuit court. On entendait de plus en plus parler de\n
surpêche, de navires industriels… On était préoccupés, mais on n’y\n
connaissait rien à la pêche. On s’est mis à proposer du poisson que nous\n
sélectionnions auprès d’un autre fournisseur en nous assurant que les\n
espèces venaient de zones où elles n’étaient pas surpêchées d’après les\n
informations qu’on trouvait. On a été de plus en plus regardants et, à\n
un moment, on a voulu pouvoir sélectionner nous-mêmes les pêcheurs. En\n
2012, on a alors lancé Pintafish, avec l’intention de travailler en\n
direct avec des pêcheurs locaux.</p>\n

<p>De fait. Sur les 23 pêcheurs belges que nous avons rencontrés, aucun\n
n’a accepté. Il n’est pas interdit de vendre du poisson en direct. Mais\n
ils craignaient qu’en contournant la criée [<em>la Vlaamse visveiling,\n
NDLR – voir chapitre 2</em>] pour une partie de leur pêche, la criée le\n
leur fasse payer en faisant passer leurs lots en dernier lors des ventes\n
aux enchères, quand la demande est moins forte et les prix plus bas.</p>\n

avez alors décidé de passer par la Vlaamse Visveiling, via deux\n
fournisseurs qui se chargent de fileter le poisson. Pourquoi n’avoir pas\n
privilégié la criée de Nieuport, spécialisée dans la petite pêche\n
côtière ?</h3>\n

<p>On achète aussi à Nieuport. Mais le choix d’espèces y est plus limité\n
et la plupart des bateaux belges débarquent leurs prises sur les sites\n

encore, une partie de votre offre provient des criées belges. Comment\n
faites-vous votre sélection ?</h3>\n

<p>On regarde l’espèce, la zone de pêche et le bateau. On s’est rendu\n
compte que les bateaux belges ramènent beaucoup d’espèces de poisson\n
très bonnes à manger, mais peu connues comme le tacaud ou le grondin.\n
Nous les privilégions parce que c’est une manière de diminuer la\n
pression sur les espèces les plus surpêchées. En plus, cela permet à la\n
fois aux navires de bien valoriser l’ensemble de leurs débarquements, de\n
ne rien gaspiller, et aux consommateur·ices d’acheter du poisson bon\n
marché. Pour faire découvrir ces espèces moins connues, on a créé des\n
colis de saison contenant de trois à six sortes de poissons\n
surgelés.</p>\n

votre clientèle s’est habituée à cette diversité et vous avez cessé\n
d’élaborer des colis, mais vous avez continué à ne proposer quasiment\n
que du poisson surgelé. Pourquoi ?</h3>\n

<p>Le surgelé a plein d’avantages : on peut acheter du poisson à la\n
bonne saison et le revendre hors saison, on peut combiner les stocks de\n
plusieurs petits pêcheurs qui vendent des quantités très réduites, les\n
client·es peuvent savoir à l’avance ce qu’on a à vendre. Et comme le\n
poisson est fileté, emballé et congelé directement, il reste super\n
frais.</p>\n

à la pêche locale. Plus de 90% de la flotte belge est composée de\n
chalutiers à perche. Est-ce une méthode de pêche que vous acceptez de\n

<p>Si on veut du poisson provenant de bateaux belges, on ne peut pas éviter les chaluts à perche. On sait que ce n’est pas la méthode la plus durable, mais on choisit uniquement des bateaux labellisés « Vers une pêche durable » [<em>voir notre article sur la pêche belge, NDLR</em>]. Même si ce n’est probablement pas suffisant, j’ai l’impression que c’est le mieux que nous puissions faire pour le moment.</p>\n

des contacts privilégiés avec certains bateaux belges plutôt qu’avec\n
d’autres ?</h3>\n

<p>C’est très bizarre à dire, mais j’ai un meilleur contact avec des\n
pêcheurs en Alaska qu’avec les pêcheurs belges ! On n’a plus vraiment de\n
contacts directs. On essaye de filtrer les bateaux selon leurs\n
pratiques, leurs trajets en mer, mais c’est difficile de tout suivre.\n
Surtout que les bateaux peuvent changer de mains. On préférerait\n
travailler en direct avec des petits pêcheurs. Malheureusement, il n’y\n
en a presque plus en Belgique.</p>\n

à petit, pour soutenir davantage la pêche artisanale, vous avez donc\n
réélargi votre gamme au-delà de la flotte belge.</h3>\n

<p>De toute façon, ça veut dire quoi « local » quand on parle de la\n
pêche ? Nos bateaux vont jusqu’en Angleterre et même en Islande ! En\n
2016, on a participé à un événement Slow Fish [<em>un réseau de\n
promotion d’une pêche durable qui fait partie du mouvement international\n
Slow Food, NDLR</em>]. On y a fait la connaissance de Caroline Bennett,\n
la fondatrice de Sole of Discretion. C’est une coopérative basée à\n
Plymouth au Royaume-Uni qui rassemble des bateaux de moins de 10 m de\n
long qui pêchent à la journée et utilisent des méthodes avec peu\n
d’impacts comme des lignes, des casiers ou des chaluts très légers. Un\n
gros client venait de les lâcher, donc ils avaient 300 à 400 kg de\n
poisson surgelé non vendu. On a proposé de les racheter et c’est ainsi\n
qu’on a commencé à collaborer.</p>\n

Pintafish propose également les produits de la mer de trois familles\n
néerlandaises, un poisson d’eau douce pêché de manière traditionnelle en\n
Finlande et du saumon sauvage d’Alaska. Pourquoi ce choix d’importer de\n
si loin du saumon, une espèce associée à la surpêche ?</h3>\n

<p>Le saumon est un poisson difficile à remplacer par d’autres et\n
beaucoup de client·es nous en demandaient. En Alaska, on a trouvé de\n
petites entreprises locales qui pêchent avec des filets maillants\n
[<em>des filets verticaux dans lesquels les poissons viennent se\n
coincer, NDLR</em>]. Cette pêche a lieu uniquement pendant les périodes\n
de migration du saumon, elle est très sélective et les stocks sont\n
vraiment bien contrôlés là-bas. Les communautés locales en vivent, donc\n
elles savent qu’elles doivent préserver cette ressource. Nos commandes\n
sont transportées par bateau sur des conteneurs jusqu’en Angleterre, où\n
Sole of Discretion se charge de fileter les poissons. C’est un bon\n
arrangement parce que, grâce à ce saumon, les ouvrier·ères de Sole of\n
Discretion ont du travail quand les bateaux anglais ne sortent pas en\n
mer.</p>\n

l’aquaculture n’est pas une option ?</h3>\n

<p>Non. Il existe différentes méthodes mais, de manière générale,\n
l’aquaculture pose énormément de problèmes. D’abord, les poissons sont\n
tellement concentrés qu’il faut ajouter plein de choses dans l’eau pour\n
qu’ils ne meurent pas, comme des antibiotiques et d’autres produits\n
chimiques. Si l’élevage a lieu en mer ou dans des lacs, toutes ces\n
substances polluent l’environnement. Et puis cela ne donne pas un bon\n
produit. Par rapport au poisson sauvage, le goût est incomparable ! Un\n
deuxième gros problème, c’est que les poissons d’élevage doivent être\n
nourris. Avec quoi ? Des poissons sauvages !</p>\n

10% de la pêche mondiale sert à produire des huiles et farines de\n
poisson à destination des poissons d’élevage, un pourcentage croissant<a href="#fn2"><sup>2</sup></a>. Ce poisson est notamment prélevé le\n
long des côtes africaines, au détriment des populations locales qui s’en\n
nourrissent.</h3>\n

<p>Au mieux, il faut un kilo de poisson sauvage pour produire un kilo de\n
poisson d’élevage. L’aquaculture recourt aussi à des protéines végétales\n
comme du soja, mais cela reste des protéines qu’il faut produire et que\n
les humains pourraient consommer directement. Les élevages de saumons\n
sont parmi les pires parce qu’ils appartiennent à de grandes entreprises\n
capitalistiques qui ne recherchent que l’argent. C’est vraiment la\n
catastrophe !</p>\n

<p>Non. Certains de nos pêcheurs ont des labels, mais nous ne les\n
recherchons pas. D’une part, il est très difficile d’en trouver qui\n
mettent la barre suffisamment haut. D’autre part, les labels ont comme\n
effet pervers de favoriser les pratiques qui permettent de les obtenir\n
avec le moindre effort.</p>\n

se positionne comme une entreprise de commerce équitable. Comment\n
fixez-vous vos prix ?</h3>\n

<p>Pour la pêche belge, on passe par deux fournisseurs qui achètent\n
eux-mêmes le poisson à la criée, donc on n’a pas beaucoup de prise. L’un\n
est assez classique et suit les prix du marché. L’autre, on peut lui\n
demander de payer davantage que les prix du marché. Avec tous nos autres\n
fournisseurs, on discute rarement des prix. Parfois, on les paye même\n
mieux que ce qu’ils proposent. Ce n’est jamais évident de définir un\n
prix juste parce que la rentabilité de la pêche dépend d’un tas de\n
facteurs comme la quantité de poisson attrapée en même temps, la\n
longueur du trajet en mer, etc.</p>\n

<p>Ils survivent. De temps en temps ils gagnent bien leur vie, de temps\n
en temps beaucoup moins. Ils sont dépendants de ce qu’ils pêchent et,\n
certains jours, ils n’attrapent rien ! Comme partout dans le monde, les\n
petits pêcheurs sont en concurrence avec de grands bateaux qui captent\n
toutes les ressources. On aimerait créer plus de liens entre ces petits\n
pêcheurs eux-mêmes, pour qu’ils s’entraident. Ce n’est pas encore trop\n
dans leur mentalité. Mais je pense que cela va changer, de la même\n
manière que le monde agricole a compris l’intérêt du circuit court.</p>\n

<p>Si je regarde notre assortiment, je dirais que notre poisson anglais\n
est plus durable que notre poisson « belge », parce que les méthodes de\n
pêche de nos bateaux anglais sont plus durables et que les distances\n
peuvent être les mêmes. Entre la pêche belge et le saumon d’Alaska, là,\n
c’est difficile de comparer…</p>\n

<p>Je n’ai pas intérêt à le dire mais, pour la plupart des espèces, oui.\n
Il faut apprendre à diversifier. Manger davantage végétarien, et aussi\n
se tourner vers des espèces moins connues. On ne peut pas tous manger\n
uniquement du saumon, du cabillaud et de la sole ! Si on aime un poisson\n
blanc, il n’y a pas de raison de ne pas aimer les autres. Cela\n
s’apprend, comme nous l’avons appris à notre clientèle.</p>\n
